The traditional sweets of the Venice Carnival have become famous all over the world: these delicacies are not only enjoyed by tourists but are also devoured by locals. Venetian fritters, known as *frittelle veneziane*, are the undisputed queens of the Carnival season. Both *fritoe venexiane* and *castagnole* are based on very ancient recipes. *Galani*, first prepared during Roman times, were made for the Saturnalia (a festival dedicated to Saturn, corresponding to today’s Carnival period) to be distributed to the crowd.
